Every loaf at Wood & Grain Project starts with a 48-hour cold ferment, locally milled stone flour, and a patience most commercial bakeries have forgotten. The result is crust that shatters and crumb that holds everything together.
Wood & Grain Project was born from a simple conviction: that the bread on your table should taste like something someone actually cared about. Not something engineered for shelf life, but something that carries the weight of time, technique, and real ingredients.
Located on South Mint Street in Charlotte's South End, our bakery is a small-batch operation by design. We bake twelve times a day, every day, because bread this good doesn't wait — and neither do we. Every loaf, every pastry, every batch of granola is made in-house from recipes we've refined over years of showing up early and paying attention.
Our groceries section is equally intentional. We partner with regional producers who share our standards, so the olive oil, the honey, the preserves on our shelves are the same quality you'd find in our ovens.
Our 48-hour cold-fermented sourdough — thick, crackling crust with an open, tangy crumb. Baked at dawn, sold by afternoon.
Forty layers of French butter and laminated dough, folded by hand each morning. Shatters when you break it — that's the standard.
Rotating with the seasons — fig and almond in autumn, citrus and poppy in spring. Always made the day it's sold.
Small-batch granola baked until deep golden, plus overnight oats in rotating flavors. Made with local honey and whole grains.
Olive oils, aged balsamics, regional honeys, and pantry essentials from producers we've tasted and trusted. Everything earns its shelf space.
Custom cakes for birthdays, weddings, and everything in between. Order 48 hours ahead — we bake them fresh, never frozen.
The sourdough from Wood & Grain changed how my family thinks about bread. My kids actually ask for it now — and that says everything.
